Eating Healthy on Vacation

Before we went to Tybee, my friend Paula informed me she was “eating healthy”. At first I was bummed. It was vacation. But then, it was a challenge, a challenge I was up to.

My menu for dinner, sesame noodles, collard greens and steamed shrimp with an awesome cocktail sauce. (We stopped at a little convenience shop in south GA. They had marmalades and salsas and jalapeño ketchup, I got the ketchup)

The Collards take a few hours, but are awesomeGreens 3Greens 4

There is very little fat in them. The noodles too. Unknown-1

Steamed in beer and vinegar and Old Bay Seasoning!

It was great on vacation! So, when I got home I kept it up and I feel great.

Time away from Staycation

I took a few days off from Staycation and went out of town to Tybee Island, GA. Tybee Island is a barrier island off the Georgia coast, outside of Savannah GA. It’s a quiet laid back little town, super friendly and a great getaway in April. Unknown

So, we went on a dolphin watch boat ride. (I was afraid it was going to be lame, but it was great!)IMG_7156

A shrimp boat was coming in, which is great if you are looking for dophin!

There were a lot of dolphins and momma dolphins with babies and it was a beautiful day and fun to have the wind in your face. IMG_7204

I highly recommend it! (they allow dogs, but I am glad I  didn’t bring Bradley Cooper.)
