Greens for the New Year

In the south we eat Collard Greens and Black eyed peas for good luck and prosperity in the new year. On New Years Day the number of peas you eat will be the number of days that will be lucky in the new year.

I love spicy greens!Greens 3You cover the greens with water and cook for about 45 minutes, then drain. Next take 4 tablespoons of butter in a small pan and add a medium onion chopped and add in 3 tablespoons of Chile de Arbol ground. Greens 2Pour the butter onion and chile mixture over the greens and add 4 cups of chicken broth and ta da! Yummy Spicy Greens!Greens 1Oh whoops add a can of green chilies with tomatoes.
