Yummy Turkey Lettuce Cups

My neighbor grew a ton of different kinds of peppers this year. Only one is hot and spicy  the Habenero. The rest have a great full flavor to them. So, I decided to use one, a purple pepper in my ground turkey mix up for dinner. I take scallions,garlic, carrots, celery, pepper(the purple one), baby bella mushrooms and sauté them then I put in a pound of ground turkey and brown it. I use turmeric, oregano, salt and pepper as spices. Then when the turkey is browned I put in a mixture of water, soy sauce and corn img_4058

Then you get your Bibb Lettuce…img_4059

And stuff them with the mixture…

It was delicious! But then leftovers! Woo Hoo! You get your pita and stuff it in there and tada!img_4066

oh I added a little ketchup! It was great too! Let me know what you think.

Yummy Collard Greens

They had collard greens as a manager’s special, 32 ounces for $1.99, so, I had to make some yummy, and a little bit spicy greens.

Here are the ingredients:

INGREDIENTS

    • 1 (1-pound) bag or 1 pound cleaned, cooked and chopped turnip greens
    • 4 tablespoons margarine
    • 2/3 cup chopped onions
    • 1 teaspoon chopped garlic
    • 2-3 teaspoons ground chile de arbol
    • 1 1/4 cups diced tomatoes
    • 2 1/2 cups low-sodium chicken stock
    • Salt       Greens1
    • Greens3 Okay, you put the greens in a large pot and cover with water . Bring to a boil and then simmer for 45 minutes. Cut up the onion and garlic and put that into the butter or margarine and soften the onions then add the chile de arbol. Instead of the tomatoes I use Herdez hot salsa. Drain the greens after the 45 min. and add the onion, butter tomato mixture and the chicken stock. You will not believe how awesome these are.

Pet Friendly Hotels – Fun Staycation

Who doesn’t love to get away to a nice hotel? But if you could bring your best friend wouldn’t it be so much better? There are several options in Atlanta to get away with your pet.

The Westin Peachtree Plaza imagesThis is a fun get away in downtown Atlanta.  It also has a rotating bar and restaurant at the top, so you get spectacular views of the city. (the pets can’t go there though) You can bring two dogs max and there is no pet fee.

The Four Seasons Hotel in Midtown allows 3 pets any size and no pet fee. IMG_3721It is beautiful and super friendly.

Then there is the Hotel Indigo 111006031909_indigo1This is a fun boutique hotel in midtown next to the Fox Theater. They allow multiple pets any size with $25.00 per pet.

Another Midtown hotel is the Artmore.artmore-hotelIt is a lovely hotel that allows two dogs any size at $50.00 per visit.

The Grand Hyatt in Buckhead UnknownA Luxurious hHotel located in Buckhead. They allow 2 cats or dogs at $100.00 per pet.

One of my favorite hotels is The Loews Hotels. Unknown-1They have a VIP program, Very Importannt Pet. Upon arrival your pet receives a name tag, a bowl and a bag of treats. I actually stayed in one in Nashville. It was unbelievably nice. The room the view the people, I totally recommend it!

The Crawfish Shack

Crawfish 1This is a hidden gem. The Crawfish Shack is off of Buford Highway. They have crawfish, obviously, but they also have awesome PoBoys. Crawfish 4These are shrimp PoBoys and Boudin Balls in the middle. crawfish 2This is the Grouper PoBoy. It is cooked perfectly. I will say one time I tried the Lobster Roll, it was a miss, but everything else I have tried is great. I even took my neighbor’s mother (from New Orleans) here and she got Gumbo and approved of it. They have really good fries too.Crawfish 3Except they give you way too many.

They do offer fried platters too, and steamed crab legs.

The owner is Vietnamese-Cambodian but he went to school or camp in Louisiana.
