Trump vs The NFL

I know everyone is sick of this, me too. The problem I am having with both sides is what are you teaching our children, both sides. I feel like both of your egos have gotten in the way of what is important, teaching out children values. You both (sides) have to understand this shapes young minds. Your words have consequences to these kids.

To president Trump, children are scared by your words, I talk to kids.

To the NFL Players, they look up to you, but what they tell me is they want to watch football.

Take everything into consideration and both sides check your ego at the door!

You scream, I scream

We all scream for ice cream!

I thought about doing a post on where to find great ice cream in Atlanta, but, I only made it to one place that was super cool ~ Roll It UP ~ Unknown

At Roll it Up, you can get your ice cream two ways – rolled ice cream or with liquid nitrogen. I ordered the rolled ice cream. You pick a base, I picked cream. Next you pick your filling, I picked oreo. Next a topping, just oreo again.

So, they pour the cream on these super cold metal sheets and chop up the filling. They push the liquid around to get it frozen…

Then, they form one layer and take a spatula and form the roll. The end product looks like this…IMG_0654

Most Important – taste, super yummy!

(It was pretty crowded and the wait was about 20 minutes, but you get to watch them make it)

Roll it up is located on Buford Hwy in Doraville.

Chicken Penne Broccoli Cheese Casserole

I went to visit my mother and father. My Dad has been living in a nursing home for about a month now. His legs just stopped working. It is hard on my brother, who lives with them, but it had to happen.(I will post more on this at another time) Mom is still at home. So, I made this for her and it was delicious.

I took two chicken breasts and cut them into strips and seasoned them with garlic powder and seasoned salt. I heated up some olive oil and fried them up in batches.

Then I took some chicken broth to deglaze the pan. Like about 1/4 of a cup. Then I poured in a container of light alfredo sauce. I was cooking the pasta at the same time, in the last two minutes I added the broccoli and let them cook together. Back to the alfredo sauce, I spooned in two tablespoons of ricotta cheese and two handfuls of mozzarella cheese. I poured the pasta and broccoli into the sauce and then poured all of that into a casserole bowl and topped with some parmesan cheese. Baked at 350 for about 20 minutes.  (sorry I didn’t take a photo)

OH and they live in Jacksonville Florida. Lots of downed trees and limbs, lost power and cable and internet. The city is getting back to normal, but it was tough.

My heart still goes out to the people on all of the islands that suffered tremendous loss from Irma and then Maria. God help them…

Lentil Soup

I made a really good lentil soup, with carrots, onions, curry powder, thyme, turmeric, tomatoes and chicken broth oh, and some chili peppers spices. The kicker was the end I put in come cajun spices. The soup was really good. RU202653.jpg.rendition.largest

It had a kick. I will give you the recipe.

But then I had to clean out the fridge, so I added some leftover lady peas and some spinach.

Post Irma In Atlanta

Most everyone in Atlanta was extremely lucky. We did not get the storm we could have. Some people are still without power, which is horrible. I think overall we were very fortunate. We had a lot of wind and rain, but nothing compared to the people in Florida, and God Bless the people in the Islands.

Bradley Cooper, Niko and I lost power early into the storm. We just hunkered down and tried to make the best of it.

I finished a book I’ve been reading. It was kinda nice. But, again, I was lucky.

I am praying for all of the people who lost their lives. I am praying for the people whose homes or businesses were destroyed.
