Corned Beef and Cabbage

I decided, for some crazy reason, I would make corned beef and cabbage. It is chilly here and it seemed like a good comfort food. So, I bought beef brisket in a bag, with pickling spices in it. Seemed like a no brainer. The directions said to cover it with water and add the spice packet. I opened the bag, hunk of beef no spices. UH OH. I decided I would cover the meat with chicken broth ( I had a big box of it), a can of beef broth, a half of beer ( I wanted to drink the other half). Pepper corns, fresh ground pepper, garlic salt, allspice and more pepper were added too. I cooked this for 2 1/2 hours. I then added 5 potatoes peeled and quartered, 4 carrots, an onion, and some celery, oh and a head of cabbage, quartered.

Now, the reason I am writing this, this broth was out of this world, delicious. I am sure I cannot remake it again, but I will try. I think it was one of the best soups I have ever made.

What next, cookies for Christmas.
