Meatless Mondays and for everyday, I roasted brussels sprouts, asparagus and squash. It is incredibly easy.
I cut the brussels sprouts into quarters and cut the squash and cut up the asparagus. I drizzled olive oil on them and sprinkled garlic powder and pepper. I mixed it all up so it all is coated. I put it in the oven at 425 degrees for 12 minutes. Then pulled them out and grated some parmesan cheese all over them and put them back in for 5 more minutes.
So so yummy!
