I have roasted and grilled zucchini before, With garlic and parmesan cheese.
But other squashes roast so well too! Butternut, acorn so many to choose from. Use garlic and olive oil or coconut oil.
Brussel sprouts are great too. Roast for 15 minutes at 400. Then cover with grated parmesan. You can also sprinkle with balsamic oil. These are so versatile and scrumptious.
Carotts are great too. It is a great way to get your kids to eat them too. Trust me and try it. It will become the summer of roasted veggies for ALL!!!
