Sometimes when it’s a holiday weekend, I forget it’s Meatless Monday. Luckily, my subconscious took over and I had a half of a tomato sandwich for breakfast.
For lunch, I went to Mediterranean Grill. I had never been before, but you know the menu. So, I got the falafel pita. It was delicious!
For dinner, I made a boca burger and a yummy bite size caprese salad. Start with fresh ripe tomatoes.
cut up and drizzle with balsamic glaze.
Then tear up fresh basil, smelling so aromatic. Finally top with mozzarella cheese.
So, fresh and scrumptious! Get some good Mozza though…
I like my Caprese with Bocconcini cheese, which is a young Mozza. Fresh basil is a must. I’m off balsamic at the moment, so I drizzle some very expensive Olive Oil over it. OH WOW!
Well, however you like it, it’s a fab dish. Meatless is a wonderful thing. I’ve been a veggie since I was 17. I’m so happy you are into Meatless Monday!
I can’t wait to try Bocconcini! I love all the fresh veggies available, and roasted squash and brussel sprouts! Yummy!
There’s no room in my tummy after all the veggies. Now fruit is coming into season, and I make homemade fruit pies, NO SUGAR with my own whole wheat crust.
In the winter I make veggie pies!
and I want gazpacho!
YES!!! Ty for the reminder!
