Eating Healthy?

I realize that is not a title that is intriguing, but I also know if you try to start, one day just one day, it then kinda becomes a habit and moves into more days.

Okay, so today I wanted to make a great healthier meatloaf. I got the recipe and the secret is mushrooms! You chop up 8 ounces of mushrooms. I put a little olive oil in a pan and half of a large onion, chopped, added carrots and celery, then the mushrooms. Cook all the water out. Mix some milk with panko, but I had panko with Italian seasoning and added two eggs. Some Worchester sauce and catsup into the mix and add a pound of turkey.

Bake it for 50 minutes at 400. I do something a little different, I add mashed potatoes all over it. Unknown-2  It turned out great!

So, if you go get a burger and fried pickles one day out of the month, great, but then try this it really is great.

I decided to visit the Emory Village location. I decided to try the fried pickles….imagesThey came out, a big basket of them. They were very good! Then, they have a lot of great looking burgers and salads and chicken sandwiches, I really wanted to have a burger, but their regular burgers are all 7 ounces and come with a side and a drink. Unknown-1 I mean they looked great, just too much with the pickles. So, they have a 7 7 7 burger, 4 oz burger with fries and a drink. The burger was delicious. The fries were good.

The place is small and cozy with photos of Lucky all over the walls. It was very comfortable and my waiter was excellent! I will go back and try some other things. I forget how close I live to Emory. It is a beautiful campus and ever growing.

Cooking all Day

I decided to make some things to take home for after the funeral. I started making a Braised Beef Ragu…images-1so, I had to try some for dinner, I put it over penne pasta…Unknown-1It is so so good!

While it was cooking I made some spicy ranch pretzels…UnknownThey take an hour and a half in the oven, they are pretty tasty!

Afterwards I baked Oatmeal, raisin, chocolate chip cookies…

My Father

My Father had suffered with dementia for a while now. About two months ago we had to move him into a home. His legs stopped functioning. Last week, my brother (who was the one making decisions on where to send him and talking to the doctors etc) called to discuss what was the next step. His heart was giving out and kidneys were going down hill. We all discussed and decided Hospice would be the next step.

God intervened and my Dad died that afternoon.

It is with a heavy heart that I, along with my Mother, brothers, Bill and Dave, and sister, Ellyn would like you to know of our sweet Fathers passing yesterday, October 18th.
All that knew him loved him.
