Then a couple of mocking birds showed up.
My Grandmother lived in New Jersey and she would tell my sister and me that a mockingbird would come and tell her all of the things we were up to. (We lived in Jacksonville, FL.) It was a good story.
So here they were. My grandmother is gone from this world, but hey….

It’s a cyclical process, but to begin when you are preparing anything keep the leftover celery or onions, or carrots in a plastic bag in the fridge. (But it can be squash or broccoli anything uncooked)
Then you get a rotisserie chicken, clean all the chicken off the bones. Put the bones and skin in a large pot and cover with low sodium chicken broth and water and all the onions carrots and celery. Bring to a boil and let it cook for at least 3 hours. (you will need to keep adding water to this as it cooks down.
This makes a broth so rich and tasty. Now, you can do this other ways, take a chicken and roast it yourself.
Strain all of the bones and everything keep the broth. To make the soup put into it whatever you like in soup or keep it simple with celery and carrots and the meat you pulled off of the bones. Season the soup with italian seasoning and lemon pepper and fresh parsley.
We don’t know what we know either. We have so many negatives and preconceptions of what we consider right and wrong, we just have no idea what we know. We need to be more open minded and not so fast to judge…..
