Twice baked palmetto cheese potato. It is Rachel Ray’s fault. I caught park of her TV show today and she was making twice baked potatoes. I was taking what I had in the fridge to create one and I thought of the palmetto cheese, which is pimento cheese with jalepenos. It might not look that great but it was delicious!

Meatless Monday
I have been trying to enjoy Meatless Mondays. It has transitioned into a lot of Meatless days…
For dinner tonight it was a veggie quesadilla. So I sautéed onions, garlic, portabello mushrooms and spinach, and the tortillas were these

and I added some cheese to bind it together. and it looked like this…
Was it delicious? Oh yes, yes it was! Enjoy!
Biscuits after the climb up Kennesaw Mountain…
My old next door neighbor, Catherine, and my new next door neighbor Josie and I went to climb Kennesaw Mountain. It was a very hot day,but, the climb is very shady.
It is a good workout not too bad. Yes, I was tired afterwards, but it also felt great!
Now the great part, we went to Mountain Biscuits afterward. 
These were wonderful!
Chicken Sausage and tomato Biscuit!
Egg, tomato and jalepenos.
Egg and Bacon Biscuit. These were super light and fluffy and really scrumptious!
After lunch Catherine went for a buggy ride.
It was a great day!

Panola Mountain State Park
Staycationers there are so many parks around Atlanta. So, Coop and I went to Panola Mountain State Park.
This marker tells you how far it is to each park area.
There are over 20 miles of trails like this one. There are three other ones that are marked trails within the forest. It is amazingly lush and green. They have signs for deer,
but we did not see any. They have Picnic shelters you can rent. They also have bikes you can rent and jon boats and canoes. They have an archery area and give classes (you can rent the equipment) They also have rustic campsites, not my style but hey…
There is not much shade on the trail.
We were in about a mile and a half and it was just too hot for the Coop.
I had plenty of water for him, but we had to turn around. When we got back to the car the sky clouded up a little.
We were kinda hoping it would rain.
I will return and I think I might rent a bike next time. More to tell then!
