Today is Josi’s Birthday! Woo Hoo!!!Catherine threw a Birthday Breakfast at her home. Here’s Catherine and Hobbie…Josi’s niece Oakley was my photographic assistant. It has been a little chilly and wintery, but, it is winter…Coop and I do love this trail…. I am not sure how they improve the graffiti, but it does seem to get better each time.
Coop loves to go off the concrete trail to the real trails…I confess, I enjoy it more too! Taking a walk is a great thing!
In the south we eat Collard Greens and Black eyed peas for good luck and prosperity in the new year. On New Years Day the number of peas you eat will be the number of days that will be lucky in the new year.
I love spicy greens!You cover the greens with water and cook for about 45 minutes, then drain. Next take 4 tablespoons of butter in a small pan and add a medium onion chopped and add in 3 tablespoons of Chile de Arbol ground. Pour the butter onion and chile mixture over the greens and add 4 cups of chicken broth and ta da! Yummy Spicy Greens!Oh whoops add a can of green chilies with tomatoes.
I ran into Santa this afternoon….I was so excited! He said he was working last minute on some toys! He is just adorable, huh? I just feel like I was so lucky to run into Santa, but, I forgot to ask him for anything. I think he really knows what I need though!
