Before we went to Tybee, my friend Paula informed me she was “eating healthy”. At first I was bummed. It was vacation. But then, it was a challenge, a challenge I was up to.
My menu for dinner, sesame noodles, collard greens and steamed shrimp with an awesome cocktail sauce. (We stopped at a little convenience shop in south GA. They had marmalades and salsas and jalapeño ketchup, I got the ketchup)
The Collards take a few hours, but are awesome
There is very little fat in them. The noodles too.
Oh and steamed shrimp, fresh, sweet yummy!
Steamed in beer and vinegar and Old Bay Seasoning!
It was great on vacation! So, when I got home I kept it up and I feel great.
Let me know if you would like any recipes. I will share some great ones next week.
