They had collard greens as a manager’s special, 32 ounces for $1.99, so, I had to make some yummy, and a little bit spicy greens.
Here are the ingredients:
INGREDIENTS
1 (1-pound) bag or 1 pound cleaned, cooked and chopped turnip greens
4 tablespoons margarine
2/3 cup chopped onions
1 teaspoon chopped garlic
2-3 teaspoons ground chile de arbol
1 1/4 cups diced tomatoes
2 1/2 cups low-sodium chicken stock
Salt
Okay, you put the greens in a large pot and cover with water . Bring to a boil and then simmer for 45 minutes. Cut up the onion and garlic and put that into the butter or margarine and soften the onions then add the chile de arbol. Instead of the tomatoes I use Herdez hot salsa. Drain the greens after the 45 min. and add the onion, butter tomato mixture and the chicken stock. You will not believe how awesome these are.

Coop and I went to the Fall Festival on Ponce. Let me first show you this kids area. How fun would this be?

I am woken up when the (sun)light streams through our white cotton bedroom curtains. I then fall asleep/wake up/argue with myself for 30 minute intervals until I decide to drag myself out of bed. This all occurs between between 5am and 7.30am. I will stagger to the bathroom and complete my ablutions. I will wander from room to room in the flat until I have gathered what I think I will need for the day. I am usually grumpy and tired but resigned to the fact that this is life and I should not complain. Finally, I leave the house and make my way to the station. It is fall again, time for the Fall Festivals! My neighborhood had their annual one today. Friends and neighbors all around, a fun time for all! They had food from Rain (Sushi, Thai, Chinese, excellent food!) Marco’s Pizza and they were grilling burgers. Pizzas delivered by delivery and fireman.
Coop enjoyed his really big water bowl, didn’t even notice all the cans and bottles. They had a silent auction, raffles (that were obviously rigged, no I did not win) Zumba classes, a cake walk and a really old magician, who amused many young children! Zumba…
There was no keeping on the trail with Coop today. He loves to go on adventures and how lucky am I! So it was a gorgeous day and cool out. We started off the trail and it was headed down to the creek. Where we saw this and this…Another peaceful afternoon by the creek. Then back on the trail and off again. We rested on a bench. and listened and looked at all of this.
Camp Creek Greenway Trail is located north of Atlanta in Lilburn,GA.This is a great trail. This was at the beginning of the trail near the parking lot. Then a little further down the trail there were these There were three of these. Then if that isn’t enough then there was a Little Library. They have tons of benches to rest. The day was lovely and peaceful.I spied this little bird… I think it is a Tufted Titmouse.
Special fountain near the end. It is just lovely. I hope everyone can take the time to visit!
